Ways to stay cool in the summer
While it’s nice to have an air conditioned retreat, sometimes we want to be out in the sunshine! Here are a couple of treats that will help you stay comfortable when you’re A/C free! These treats are family friendly and are a healthy alternative to many of the ice pops you can buy in store.
If you don’t have ice pop molds and cannot find them in your local shops, feel free to use ice cube trays with popsicle sticks inserted into the middle of the pops.
The beginning of summer always means strawberries – so why not take full advantage of them with a strawberry-lime ice pop?
- ½ lb strawberries
- ½ – ¾ cup water
- 3 tbsp agave or white sugar
- 3 tbsp lime juice
- Zest of one lime
Use a blender to mix everything together. If the mixture is too tart, add more sweetener (NOTE: If you are using a natural sweetener like agave, start with slightly less as it is sweeter than white sugar). Add more sugar or water if you find the mix too tart or strong. Pour into your Popsicle molds and put in the freezer until set.
Another summer favourite is the creamsicle. These creamy orange treats are a staple in most childhoods. Here’s a homemade version that will satisfy the kid in anyone:
- 1 ¼ cup orange juice (fresh is best but you can use frozen if you prefer no pulp)
- 1 cup coconut milk (the light version does not provide the same creamy texture as the full fat version, but can be used in a pinch)
- 3 tbsp agave
- ½ tsp vanilla extract.
- Zest of ½ orange (optional)
Mix everything together in a bowl and pour into your molds. Freeze and enjoy. If you want to enhance the flavour, add the zest of ½ an orange.
